ETX Beef Processors is a family-owned business that serves local communities with high-quality and affordable processing of livestock. The business was established by Earl Lang, Russell Lang, and Matt Lang, and began operations on December 28, 2023, following a year of construction. The Langs decided to start the business because they saw a need for more USDA meat packing plants in this part of Texas. They wanted to provide a convenient and reliable service for local farmers, ranchers and consumers who raise or buy cattle, hogs, goats and sheep.
Anyone can bring their animals to ETX Beef Processor, with a normal wait time of one to two days. Customers can call (903) 876-2882 to make an appointment and specify how they want their meat cut and packaged. The pricing is simple: $125 slaughter fee and $1.25 per pound hanging weight fee. There is no extra charge for custom processing, including tenderizing of steaks.
ETX Beef Processor has a USDA inspector on staff anytime the doors are open, ensuring the highest standards of food safety and quality. The inspector conducts daily inspections of the facility, from the entry point, kill floor, processing and packaging areas. The plant does not begin daily operations until it has been fully inspected and signed off on. The business is also a certified USDA Grading plant, with the ability to offer USDA Certified Texas Beef, USDA Certified Texas Wagyu Beef, and USDA Texas Certified Akaushi Beef. These labels indicate the origin, breed and grade of the beef, giving customers more information and choices.
One of the distinctive features of ETX Beef Processor is its dry aging process, which lasts a minimum of 10 days. This process allows the water to evaporate and natural enzymes to break down the muscle fibers, resulting in more tender and flavorful meat. Another benefit of the dry aging process is the prevention of E. coli bacteria, which cannot survive in the low-moisture environment.
Unlike some other processors, ETX Beef Processor does not add anything to the meat, such as growth hormones or fillers. The meat is processed and packaged in vacuum-sealed bags, which preserve the freshness and quality for up to a year in the freezer. In addition to processing animals, ETX Beef Processor has a storefront on premises where customers can purchase beef (all cuts), pork (all cuts), and several varieties of sausage. The business also has another storefront location in Palestine, at 513 Old Eckhart Rd, Suite 3A, and will be opening another soon in Tyler. Frankston storefront hours are Mon-Fri 8am to 5pm, Palestine hours are Tue-Fri 10am-6pm, Saturdays 10am to 2pm.
